Working as quickly, but accurately as possible carve the strawberry, ice, decorate and put back in the freezer. When it is frozen wrap in plastic wrap and put back in the freezer. When You are ready to work with the cake, let it stay wrapped until it is defrosted. Put on finishing touches and then serve.
