When preparing the broccoli using baking soda in the water to blanch the broccoli, MAKE SURE you blanch the broccoli ONLY for a few seconds!!! Otherwise, your broccoli will over cook! To stop the cooking process, I immediately submerged the broccoli in an ice bath. I had to cook my broccoli TWICE, because I over cooked it the first time. That was okay, I just used the first batch for broccoli soup!
