Mexican Feast

Project Description

Share a little about the ingredients and techniques used to create this dish/item. I used both our local hispanic market and my supermarket to purchase tomatillos, cilantro, corn tortillas, tomatoes, avocados, boneless chicken thighs, white onions, poblano chile peppers, jalapeño pepper, serrano pepper, and Mexican oregano. I also picked up two Mexican cheeses. I followed Deborah's lessons - she's a great teacher - and we enjoyed tacos with chicken or rajas (onions and poblano) in the other. My favorite new creation was the Tomatillo-Avocado Salsa and the taco with rajas. My husband was over the moon.
