What are you most proud of? Getting the sauce right. What advice would you give someone starting this project? I thought timing the food was the most difficult thing. Finishing two dishes so that they were both warm was challenging. I also had to add a little flour to the lemon-caper sauce to thicken it Don't skip on the lemon zest--made the sauce.
