Caramel Apple Cupcakes

Share a little about the ingredients and techniques used to create this dish/item. Apple cupcakes, homemade apple filling, caramel cream cheese frosting and drizzles caramel sauce for garnish. APPLE CUPCAKES (makes 15 cupcakes)--- 1/2 cup unsalted butter, room temp. 1/2 cup sugar. 1/3 cup packed brown sugar. 2 eggs. 1 tsp vanilla. 1 1/2 cups AP flour. 2 tsp baking powder. 1/2 tsp baking soda. 1/2 tsp salt. 1/2 tsp cinnamon. 1/2 cup butter milk. 2/3 cup chopped apples. 1) Preheat oven to 350 degrees. Line your cupcakes pan with liners. 2) Mix in the flour, baking powder, baking soda, salt and cinnamon, set aside. 3) Cream together the butter and sugar. One at a time, mix in the eggs, add the vanilla. Beating well after each addition. 4) Slowly blend 1/3 of the flour mixture into the creamed mixture, then 1/2 the milk, another 1/3 of the flour, the remaining milk, and the remaining flour, scrape the sides of the bowl occasionally throughout this process. 5) Gently fold in apples, do not over mix. 6) Spoon in each prepare cupcakes liners 3/4 full. Bake for 17-20 mins or until a toothpick comes out clean. 7) Leave in pan for 3-4 mins before removing to a wire rack to cool completely. APPLE FILLING (for 2 recipes of cupcakes)--- 2 medium apple, chopped 2 tbsp butter 2 tbsp sugar 1/4 cup brown sugar 1 tsp lemon juice 1/8 tsp cinnamon 2 tbsp water mixed with 1/2 tbsp corn starch 1) In a medium pan, melt the butter on medium-high heat. 2) Add the apples, sugars, lemon juice, cinnamon and stir. Cook until bubbling, about 5 mins. 3) Add the cornstarch mixture and bring to bubble, cook for 1-2 mins until thickens. CREAM CHEESE FROSTING---2 (8 oz) packages cream cheese, softened. 1/2 cup butter, softened. 2 cups sifted powder sugar. 1 tsp vanilla extract. Cream together the cream cheese and butter until creamy, Mix in the vanilla, then gradually stir in the powder sugar. Add more powder sugar if you like your frosting more sweeter, 1/2 cup at a time....I just like mine not overly sweet!! I use store bought caramel sauce. What are you most proud of? Very delicious...!!! What advice would you give someone starting this project? Easy to make and you get the "wow" with little effort...Try it !!
