Third time making this nutritious, delicious, Italian bean stew in the pressure cooker. I still couldn't find escarole in my local grocery stores so I substituted with kale. I cooked it for 10 min. in my electric pressure cooker, quick release then added kale. Left with lid closed for 6 min. to soften kale but not over cook the Cannellini beans. This worked like a charm!
