Braised Oxtails in a Slow Cooker

Share a little about the ingredients and techniques used to create this dish/item. I seasoned & dredged about 3 lbs of oxtails and a less than 1 lb chuck roast. I cooked bacon in some EVOO & removed the cooked bacon. Then browned all the beef. I added the aromatics (onions, carrots, celery, garlic) & sautéed them for about 4 - 5 minutes. Then added red wine, beef broth, thyme, & a bay leaf. I used the same basic recipe as the pot roast, but put everything in a slow cooker. It all really turned out great. My whole family was really pleased with it. I also made some homemade multi-grain, no knead bread to go with the sauce. Everyone really loved the sauce. (I hate to say that these pictures are after everyone had already grabbed servings. I forgot to take pictures beforehand.)
