I am not happy to have defects on my cakes so finish is all important to me and of course a happy couple What advice would you give someone starting this project? Always make sure you have a lovely smooth finish on the cake before decorating. Fill in any holes or defects with marzipan before adding the marzipan layer and then smooth smooth with an icing smoothing tool before adding the fondant. If you get the marzipan smooth then it is much easier to get the right finish when applying the icing and on a simple cake this is very important to the look as you cannot hide any defects.
