Awesome work!! I am from Austrilia too and you are right, no one seems to sell the texture mats yet but I think they are coming to a couple of stores. I had to order my texture mat direct from the USA, I got mine from jennifer Dontz at Sugar Delites, she was fantastic and so helpful, so contact her if you ever need anything from the USA.
I am going to try to make this cake next week, I am really nervous, I haven't done anything like this before. Any tips? What fondant did you use? I am trying to decide if I should use fondarific as suggested or would Bakels work ok? Did you use ganache? And you mentioned supports, how did you tackle it?
