Maya's 1st birthday cake

Project Description

Share a little about the materials, processes, and techniques used to create this cake I had a lot of fun with this cake, all early days for me yet in making cakes for others but it turned out not to shabby and tasted so yummy.I know i can improve but i still like the look of this one :)..I made a double batch of super rich chocolate almost mud style cake.It was so moist, lots of butter milk and cocco.I also used a good quality rich vanilla sugar syrup to spray coat each layer first before filling with wedding style buttercream..Once filled i chilled it an put in 3 bubble T straws to give the 7" tall cake support an have somewhere for the wire from my topper to go to keep it stable....Then iced with Swiss buttercream,i did add more icing sugar to this because it was such a hot day so it did crust a by the time i finished going around a few times with a pallet knife..I only made my toppers a few days before hand but they dried nicely.I used cocco an glucose to colour the branch as i had no brown fondant..I did manage to get a few sprinles on the side that i missed,i was in a bit of a rush to get it finished in time..:) What are you most proud of? My topper and an how the cake tasted :D What advice would you give someone starting this project? I would say i found it easier to do my Swiss buttercream by hand (gloved of course! ) than use a wisk.I could keep stirring through an rub the mix in my gloved hand to check for grains..An remove it from heat as soon as the sugar is all desolved! An straight into running mixer,on low until all in then high until you have your firm peaks :) .Also i used way less butter ....
