Description
Using a roasted chicken carcass lends a lot of flavor to this quick stock. To make a larger quantity of stock, save carcasses from roasted chickens in the freezer. Alternatively, you can use raw chicken pieces. Celeste likes to save the backbones and wings from home- butchered chickens for this purpose. If sautéing in Step 1 is too inconvenient for you, just add everything to the pot and proceed with Step 2. The sautéing step builds a richer, more concentrated flavor, but homemade stock is exceptionally better than store bought regardless of this sauté step. Yield is about 2 quarts (1.9 l).
