Sautéed Mushrooms

Description

The most important thing about cooking mushrooms is to understand that they benefit from being treated like meat. Browning is everything here! In order to maximize browning, avoid crowding the pan with too many mushrooms at once. Celeste recommends cooking half first, but the important thing is to make sure that you add only as many as can fit in a single layer. Each mushroom should come into contact with the hot skillet. Another way to maximize browning is to stir infrequently. Frequent stirring, in fact, cools the food and reduces browning, not what we’re going for here. Resist the urge to stir incessantly and just relax; maybe enjoy a few sips of wine, while you let the heat of the pan do all the work. Feel free to stir in any herb of your choosing and experiment with some grated parmesan and balsamic vinegar instead of the suggested lemon zest and juice to finish.
