Mexican Chicken with Rice and Corn
Robin MillerThis isn’t your average chicken and rice, and that’s because one ingredient changes the game – enchilada sauce. Red enchilada sauce is a smooth, satiny sauce made from red chiles, tomatoes, and spices. Much richer than plain tomato sauce, it adds incredible depth to a variety of dishes. In this recipe, I used mild red enchilada sauce, but you can also use green enchilada sauce and choose between mild and hot.
About the corn: This recipe calls for fiesta-style corn, canned corn with bell peppers. It’s also called Mexicorn and is sold next to the other canned corn products in the grocery store.
