Description
In North America, lamb chops come in three varieties: rib, loin and shoulder. The rib chops are the individual chops from a rack of lamb, each chop one bone off the rack. These are thin and quickly overcooked in an air fryer, leading to a less than satisfactory dinner from the machine (but a fine one off the grill). By contrast, loin chops, the ones called for here, are like little lamb T-bones. They tend to be thicker and hold up better to the machine’s heat.
