Description
No, not "fish and chips"! Instead, cod fillets are coated in crushed potato chips, so you get the flavor of fish and chips in every bite. The coating requires a double dip in the egg and crushed potato chips to be thick enough to stand in for the missing French fries! Crush the potato chips right in their bag, or put the amount you need in a plastic bag, seal it well, and roll it with a rolling pin, turning the bag repeatedly and working gently so it doesn’t open.
