Whether you go nuts for savory, spicy or sweet snacks, these roasted nuts recipes will get you munching! They’re great to share at a football game — the crow crowd will love the incredible flavor and variety. And, we think you’ll love how quick they are to make — 15 minutes is about all it takes.
The most important ingredient is of course, the nuts. Take advantage of markets that sell raw nuts from bulk bins, as the combination of nuts for these recipes is left to your choosing.
I love almonds, pecans, walnuts and Brazil nuts. I typically use these four nuts, but the variety is completely your choosing. Make sure you purchase raw nuts, since we’ll be roasting them ourselves. Feel free to double or triple the recipes below.
Savory rosemary mixed nuts recipe
Makes about 3 cups
Ingredients:
- 1 pound (about 3 cups) mixed raw nuts
- 1½ tablespoons minced fresh rosemary
- 1½ tablespoons brown sugar
- ½ teaspoon kosher salt
- ½ teaspoon cayenne
- 1 tablespoon olive oil
Step 1:
Preheat oven to 350 F. Place nuts in a single layer on a cookie sheet and roast for 10 minutes.
Step 2:
While nuts are roasting, mix the rosemary, brown sugar, salt, cayenne and olive oil in a medium bowl.
Step 3:
Once the nuts are done, place them in the bowl with the rosemary mixture while still hot. You’ll hear them crackle! These are delicious served either warm or cooled. Store in an airtight container at room temperature.
Coffee glazed mixed nuts recipe
Makes about 3 cups.
Ingredients:
- 1 pound (about 3 cups) mixed raw nuts
- 1 tablespoon instant coffee granules
- ¼ teaspoon kosher salt
- ¼ cup maple syrup
- ½ teaspoon vanilla extract
Step 1:
Preheat oven to 300 F. Line a rimmed cookie sheet with parchment paper.
Step 2:
In a medium bowl, whisk together coffee granules, salt and maple syrup. Warm the mixture in the microwave for 30 seconds. Whisk until most of the granules have dissolved. Let the mixture sit for a couple of minutes to soften the remaining granules. Whisk in vanilla.
Step 3:
Place raw nuts into the bowl and toss in the coffee syrup mixture until all nuts are well coated. Place on the prepared cookie sheet and roast for 10 minutes. After 10 minutes, stir the nuts and roast for another 5 minutes.
Step 4:
Remove from the oven and let cool completely. If you notice large chunks bunched together, use two forks to separate them. The glaze will harden completely once the nuts have cooled. Store in an airtight container in room temperature.
Cocoa chipotle mixed nuts recipe
Makes about 3 cups.
Ingredients:
- 1 pound (about 3 cups) mixed raw nuts
- ¼ cup corn syrup or honey
- ¼ cup unsweetened cocoa powder
- 1 teaspoon cinnamon
- ½ teaspoon chipotle powder
- ¼ teaspoon kosher salt
Step 1:
Preheat oven to 350 F. Line a rimmed cookie sheet with parchment paper and spread the nuts on the sheet.
Step 2:
Roast nuts for 10 minutes.
Step 3:
In the last 5 minutes that the nuts are roasting, place remaining ingredients in a medium saucepan and warm over medium-low heat. Whisk constantly until the mixture is smooth. The mixture should feel thinner as it warms. Remove from heat.
Step 4:
Remove nuts from the oven and place into the saucepan. Place the parchment-lined cookie sheet aside for now. Stir the nuts into the mixture to coat them completely.
Step 5:
Once coated, spread the nuts over the parchment. Let the mixture cool completely. Use two forks to separate any large chunks of nuts before it completely cools. Store in an airtight container in room temperature.
