S’mores are a classic campfire treat, but those flavors you know and love can taste just as satisfying sans-campfire! These three frozen snacks are perfect for a hot summer’s day, and you only need a few quick recipes to pull ’em all together.
S’mores Ice Cream

1. Roast the Marshmallows
Turn your oven broiler on high, line a cookie sheet with waxed paper and grease the paper so the marshmallows don’t stick to it.
Place the marshmallows on the cookie sheet and place in the center rack for only 30-40 seconds. Keep the oven door cracked so you can watch the marshmallows; pull them out once golden brown.
2. Mix ‘Em In
Place half of your ice cream into a food processor, followed by the warm roasted marshmallows. Process until the mixture is smooth. Add the remaining ice cream and pulse until combined.
You can refreeze and dig in with a spoon as-is, but if you’re feeling extra indulgent you can use this ice cream to make one of the recipes below.
S’mores Ice Cream Pie
Yield: one 9″ pie

1. Make the Graham Cracker Crust
Use a food processor to crush graham crackers into crumbs. Add melted butter and pulse until combined.
Pro Tip: To make it extra sweet, substitute the graham crackers for crushed cookies and make a cookie crumb crust.
Pour the mixture into a 9″ pie plate. Press it firmly on the bottom and along the sides and refrigerate.
2. Add the Ice Cream
Pour the s’mores ice cream into the crust. Smooth the top and place the pie in the freezer for at least 4 hours to firm.
3. Top With Ganache
Make the ganache topping just before serving. In a small bowl, heat the heavy cream in the microwave for 1 minute. Add chocolate chips and stir until melted and smooth. If needed to melt further, microwave in 20-30 second bursts, stirring in between each burst.
Drizzle the ganache over the top of each slice, then dig in!
S’mores Ice Cream Sandwiches
Yield: 9-10 ice cream sandwiches

1. Freeze
Line an 8″ square pan with parchment paper. Pour the s’mores ice cream into the pan. Place in the freezer for at least 6 hours, or overnight.
2. Make the Chocolate Topping
Make the ganache topping just before serving. In a small bowl, heat the heavy cream in the microwave for 1 minute. Add chocolate chips and stir until melted and smooth. If needed to melt further, microwave in 20-30 second bursts, stirring in between each burst.
3. Build the Sandwiches
Cut or scoop the ice cream into equal portions and sandwich between two graham crackers. Dip the sandwich into the ganache and decorate with more chocolate drizzles. You’re done!
