If you wanna grow your own veggies but tend to be, err, super impatient, there’s good news: you don’t have to wait all summer to score homegrown greens. These fast-growing vegetables can be harvested in less than two months, so you’ll have fresh grub in no time.
1. Green Onions (Scallions)
Harvest In: 20-30 days
Green onions spring up at an almost magical rate — the first crop can be ready in under three weeks, once the stalks are 6″ tall. Up to 50 onions can grow in a space of just one square foot — making ’em a great veggie to grow indoors — and because they thrive in cool weather, they’re ideal for planting in spring.
2. Radishes
Harvest In: 20-30 days
Radishes are also fast-growing, so planting them in spring or late summer gives almost instant gratification. Add ’em to salads for extra zing, roast with root vegetables, or make ’em a topping to spaghetti squash tacos.
3. Spinach
Harvest In: 45-50 days
A cool-weather veggie, spinach does best when planted in early spring or late summer. The leafy green is a delicious salad staple, but also crazy versatile — you can cook it into a cheesy turkey lasagna, sauté it in a ricotta gnudi or bake it into a breakfast tart. Spinach also grows well in a raised-bed garden and can be saved for up to a year (!) if stored properly.
4. Lettuce
Harvest In: 45-55 days
Most varieties sprout quickly, though there are a few outliers — romaine, for example, can take about 75-85 days. Simple salads are much more satisfying with greens you grow yourself, so use ’em to create a main course meal you can be proud of.
5. Summer Squash
Harvest In: 50-60 days
Squash is known for its sweet, subtle flavor, its versatility and the fact that there are a ton of different fast-growing varieties to choose from. Once it’s grown, keep it simple and cook a comforting ratatouille, or think outside the box and give ’em a quick pickle.
