While cake decorators tend to spend a lot of time detailing the outside of cakes Azara Goldston enjoys adding a surprise on the inside with patterned cake layers. Class Sessions
Introduction
1:57
Take a brief look at what you will learn in this class with some special notes from Azara on how this puzzle cake design came together. There are no fancy tools, it is an easy process, and Azara provides her recipe for flexible sponge cake to ensure you are successful with this interior design technique.
Making the Sponge Cake
50:00
Utilizing a flexible sponge cake is an important part of creating these interior designs. In this lesson, Azara shares her recipe and takes you through each step of the process from mise en place to de-panning the cakes and everything in between. She breaks down the recipe into easy-to-follow steps with tips and tricks for whipping up a perfect meringue, folding it into the batter without over deflating, and even coloring the batter to reach the perfect hue.
Leveling and Torting
21:00
Whether you are a seasoned cake designer or just getting started, don’t skip this important lesson on leveling, torting, and layering cakes. Azara will take you through the basic steps first then discusses proper thickness for cutting the insert layers and how they will be used in the pattern.
Assembling the Pattern
38:00
Now that all the prep work has been completed it is time to assemble the interior design. In this lesson, Azara will show you how to insert cake layers and buttercream within the base cake creating the puzzle design. Then you will see how the completed base layers are inverted onto each other to complete the design. While this is a simple process there are a few key points that should be followed.
Final Coating
24:09
Applying buttercream to the cake in two layers helps seal the cake in and keeps crumbs out of the finished cake. Azara will take you through the application of a crumb coat and final coat of buttercream before cleaning up the final coat and decorating with a simple decor. And finally, Azara demonstrates the proper cutting technique for maximum impact revealing the puzzle design inside.
