Tired of shopping after a long day at work, or scrounging for ingredients that only yield lackluster weeknight meals? Spice up dinnertime with quick and easy solutions from renowned chef and cookbook author Sara Moulton! Sara starts by sharing her pantry-stocking tips, her meal-planning strategy, and even shopping tricks to set yourself up for success. Then, learn how to whip up five-ingredient mains, salad suppers, pasta, eggs, and more! Sara's Buffalo orzo with chicken, sausage-stuffed shrimp, chicken saltimbocca, seared scallop salad, veggie burritos and so much more will have everyone asking for seconds! Sara also shares tricks for turning humdrum veggies and grains into yummy sides to round out your meal. Plus, discover her solution for "cooking once, eating twice" by transforming leftovers, such as grilled lamb chops into tasty lamb burgers. What will you do with all the time you've saved with these smarter, faster weeknight meals?
Meet cookbook author and cooking show host Sara Moulton and learn to take charge of your weeknight dinners with a well-stocked pantry and sensible cooking strategies. Sara gets cooking right away with two easy favorites: buffalo orzo with chicken, and sausage-stuffed baked shrimp.
Shredding vegetables is a great shortcut to hearty side dishes, such as sautéed sweet and sour beets. When fresh produce is out of season, jazz up frozen veggies with Sara's guidance, and use her tricks for preparing and freezing grains that you can reheat for an easy side dish.
Thin cuts of meat cook quickly, so they're perfect for a speedy dinner. Try Sara's chicken Saltimbocca with a tangy pan sauce, or consider fish with a mustard tarragon sauce that's delicious with many different proteins. Sara suggests types of fish to consider, including convenient frozen fillets.
For a light but satisfying meal, Sara recommends trying a salad. Learn how to mix up a weekly batch of vinaigrette that's better than anything out of a bottle, and how to bulk up salads with beans and proteins. Give dinner an Asian twist with a Thai steak salad or try seared scallops, so elegant and easy.
Eggs offer an affordable, low-calorie protein that's easy to prepare for dinner. Sara discusses how to shop for and store fresh eggs. Prepare them with a tomato, onion and garlic mixture, baked into ham cups with cheese, or make pasta with scrambled eggs and bacon. You'll love Sara's techniques!
Sara shares some meatless options that will satisfy even die-hard carnivores. Make burritos with roasted Portobello mushrooms and vegetables or fill ravioli with spicy greens and ricotta, using Sara's easy substitute for pasta dough.
Cook once, eat twice by repurposing ingredients for a second meal. Turn grilled lamb chops from one meal into Greek lamb burgers for another. Or make a spicy pork tenderloin, then Vietnamese-style sandwiches. You'll love the convenience of Sara's double-duty dinners!
