Plus, create a beach-themed cake that combines delicate roses, tropical plumerias, sparkling sugar coral, breathtaking sea foam effects and edible sea glass! By the end of class, you’ll have learned a collection of techniques you can use to achieve head-turning cakes without fancy materials or expensive tools.
Class Sessions
Antique Cake
18:15
Get inspired by Kristen Erich, a passionate cake designer who will guide you through the creation of three unforgettable cakes. Start with learning how to emboss fondant on a one-tier cake and paint it with luster dust for an antique finish. Then Kristen shows how to pipe bead and rope borders.
Antique Cake: Magnolia
13:59
Put the finishing touch on your antique cake: a beautiful gum paste magnolia. Kristen teaches you how to form different-sized petals and the textural flower center with realistic details. In addition, you'll learn how to assemble the magnolia, which provides the perfect topper.
Tiny Ballerina: Painting & Roses
28:24
Get started on the second cake by making a tiny ballerina plaque. Kristen demonstrates how to trace a picture onto fondant and paint it with shortening and petal dust for a beautiful translucent look. You'll also learn the pinch-pull-wrap method of making roses by hand for the plaque's border.
Tiny Ballerina: Draping & Finishing
19:41
Complete the tiny ballerina cake with beautiful swags and drapes on the bottom tier and a unique crackle finish for the top tier. Kristen shows you how to attach and arrange the swags and create depth in the draping. Then learn to pipe a bead border around the top of the tiers.
Endless Summer: Flowers & Coral
25:38
Begin your third cake by creating its decorative elements. Kristen shows you how to create a delicate rose, a tropical plumeria and simple sparkling coral. The flowers and coral will add dramatic texture to this ocean-inspired cake. The uses for the techniques you'll learn are limitless!
Endless Summer: Netting & Sea Glass
18:14
Ahoy! There's more sea-themed elements ahead for the Endless Summer cake. Kristen shows you how to add a gilded fisherman's net on the bottom tier. Then get out the corn syrup -- the crackled effect from Lesson 4 is perfect for a sea-foam tier. Plus, learn how to make and break sugar sea glass.
Endless Summer: Waves & Finishing
16:14
Complete your three-tiered ocean voyage. Learn how to create waves with royal icing to finish off the bottom tier. Then use all that sparkling sea glass to encrust the top tier for a stunning, textured look. Finally, place the flower and coral embellishments as you finish your third cake!

Kristen started Bliss Pastry in DeLand, Florida, where she now creates custom-designed wedding and celebration cakes.
