Pattern Description:
I have had to change to a dairy-free diet and have been looking for a nice moist cake recipe and it seems like most of the recipes that I have tried are dry or have a off taste to them. So I decided to try adding moisture with fruit and let's just say that I hit a homerun!! This cake is very moist and flavorful and easy to make. Unlike most cakes which turn dry within a day or so this one stays very moist and delicious.
Sizing / Finished Measurements:
- 2 Loaves or 1 bundt
Materials:
- 3 1/2 cups Unbleached All Purpose Flour
- 1 1/4 cups Granulated Sugar
- 2 tsp Ground Cinnamon
- 1/2 tsp Salt
- 2 tsp Baking Soda
- 2 cups Water
- 2/3 cup Canola Oil
- 2 tbsp Apple Cider Vinegar
- 2 tsp Vanilla Extract
- 1 cup Sweet Cherries; stems & pits removed
- 1 tsp Honey
- 2 loaf pans or 1 bundt pan
- Cooking Spray
