I fell in love with the idea of this traditional Irish bread while reading The irish Country Doctor series of books. Then I looked up recipes and knew that this was my kind of bread! Sweet and fruity, it's like the raisin bread I've always adored only better.
I wanted my diabetic husband to be able to enjoy this, too, so I came up with two diabetic friendly variations. One is for those who are allowed some sweet and some white flour and the other is for more serious diabetics.

Since retiring from my teaching career I've discovered that there is life outside of the classroom! I spend parts of most of my days indulging in my favorite hobbies of quilting and sewing.
