Dairy-Free Chocolate Cake

Pattern Description:

I was diagnosed in June as having a severe dairy allergy which has made birthday's soooo much fun. My sister's birthday was the day before Thanksgiving and she asked to make her a homemade chocolate cake that would be safe for me to enjoy. It was a daunting task especially since all of the previous dairy-free or vegan cake recipes that I had tried were not the greatest. The biggest complaint is that they were dry.

This cake was easy to make and came out very moist and oh so sinfully rich tasting! The icing is also easy to make and the greatest thing that I found was when I took a piece to work when I went to eat it the icing was still on the cake and not all over the sandwich bag. That is a plus in my book because the icing is the best part!


  • Mixing bowls
  • Electric Mixer (Stand mixer works best but not necessary)
  • PAM Original Cooking Spray (to grease both round cake pans)
  • 1 3/4 cups Unbleached All Purpose flour
  • 2 cups Sugar
  • 3/4 cup Hershey's Dark Chocolate Cocoa Powder (or Dutch Cocoa Powder if you don't like dark chocolate)
  • 2 tsps Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Kosher Salt
  • 1 can unsweetened coconut milk (do not use light)
  • 4 tsp Apple Cider Vinegar
  • 3 large eggs, room temperature
  • 1 cup Freshly brewed hot coffee
  • 2 round 8-in x 2-in cake pans

You Will Also Need:

  • 2 round 8-in x 2-in rounds
