Cows are wonderful animals. I've adored them since I was very young. I even took one to school once, (she was a Guernsey called Alma). Holstein cattle though have far more knittable patterns. Here's my tribute, complete with yarn-dispensing teats. The bag is begun at the top with the loops to hold the straps.
Unfelted gauge over stranded Cow pattern:
14 sts x 16 rows = 4" on Larger needles
