Is there an easy why to make a notch in the post to prevent the earring back from slipping off?

You could try gently closing your wire cutters and turning them to score a ridge in the wire. However, you'd probably need practice to get it right. I would probably use a plastic back. They seem to grip and stay on pretty well.

That is how I am making this notch. The wire cutters are good for making the initial pass for this notch, but to finish it the way I want, I take my small triangular file and use that to make the notch.
If you want to practice on how much pressure you use with your wire cutters, the best way I think is the way I learned (from working as an engineer). Get some solid wire that has colored insulation. Just go to your hardware store and tell them you want some solid core wire with insulation; they might have some spool ends that they can sell to you cheaply. Use a pair of wire cutters, not your good ones, and try to score a line about 1/2" from the end..you want to go deep enough that you cut the insulation off, but not deep enough to cut the wire itself. Wires like these give you immediate feedback on how much pressure to use.
