Excellent Teacher!

This class was so full of great practical information and wonderful time saving tips. I love how he explains why he does each step - makes so much more sense than reading it in a recipe. I thoroughly enjoyed this class. A perfect accompaniment to his pasta sauces class which I have also taken!

Learning so much!

Learned some key tips that made all the difference - letting the dough rest after the mixing and initial quick knead + running the pasta sheets only once per setting after the initial setting. This creates a more tender pasta. I was overworking my dough previously, and using too much flour.
