Lesson Plan


Lesson 1. Introduction

  • Meet world-renowned instructor Nicholas Lodge and learn to transfer letters onto a cake using a pin or via embossing. Then, learn how to mix gel colors for hues that pop and add dimension to your designs.


Lesson 2. Royal Icing Techniques

  • Learn to love your piping bag as you master creating monograms and messages by hand. Nicholas takes you through several lovely typefaces, whose templates are included in your class materials, and shows you how to plan and execute your message flawlessly. Use royal icing to pipe letters on parchment that can be transferred to the cake after they are dry.


Lesson 3. Metallics

  • Give your letters luster and sparkle as you make shiny gold, silver and even bronze paint for fondant or gum paste letters. Make your own dazzling metallic icing, perfect for piping on a cake, or add disco dust for a glittery finish.


Lesson 4. Stencils

  • Create charming monogrammed plaques and medallions as you apply dusts or royal icing to a stencil and learn to scale this method for use on a large project. Discover how softened fondant can give you a perfect color match and where to go to have custom stencils created.


Lesson 5. Cutters

  • Add tylose powder to your fondant to create letters that keep their shape as Nicholas demonstrates a variety of cutters for perfect lettering, every time. Then, Nicholas shares his clever method for creating interlinked monograms.


Lesson 6. Dimensional Lettering

  • Clients and friends will stand up and take notice when you add freestanding monograms to the top of your cakes. Cut, texture and add support to your letters. Create a delightful polka-dot inlay pattern and use a clay gun to create a rope of modified fondant to form script letters that dry hard. Finish the class with a tour of the numerous ways to incorporate monograms and messaging into your cakes.
