Difficulty:

Category: Cake Decorating

Type of item: Food

For: Women

Style: Classic, Formal / Bridal, Traditional

Materials

Cake of your choice, 2x 7" round, 2x9" round. Fondant Ivory and white. Royal icing. pins. Cake board Ribbon Clay pipe. piping bag. cake board fine writing piping tip. Tylose glue. pearls (edable). Flower/ cake topper of your choice.

What was your inspiration?

Elegant Weddings. I Just love a simple and elegant wedding cake.

What are you most proud of?

The design. Its simple to do and looks great. This cake won the local show.

What advice would you give someone starting this project?

Stack the two bottom cakes with a layer with butter cream icing between to hold them together. Do the same for the top two.
Cover the cake board with fondant (Ivory) and cut to the edge of the board.
Cover the bottom cake with fondant (Ivory) and smooth the icing. Cut of excess icing. Place a small ball of wet fondant in the center of the cake board and place the bottom cake on the board. Smooth icing again. Repeat for top layer.
When the cake is covered alow fondant to harden.
Mark out the spaces you want your "piping" to go and place a pin into the icing to mark the spot. (Put the pin where it will be covered up)
Using the clay gun, push out the white fondant to the size you need to go from pin point to pin point, with the desired drop. Place glue on the back of the fondant and pin into place on the cake. (Using the same pins)
Give the glue plenty of time to dry. If the glue wont hold use royal icing to stick the work on. Just brush away what royal icing you can see with a slightly damp(not wet) paint prush.
Repeat this on the top and botttom with as many drops as you like (More then three gets bulky at the top)
Pipe the small dots on with royal icing and glue the pearl on at the top of each section to help cover the join. Pipe three larger dots, One at the very top of each join and one eather side. To finish off this cake place flowers or a cake topper of your choice and enjoy.

Hi I love this cake and would like to attempt to make it. I am a amateur at decorating. I have made cakes for years with my own designs and people love them, but wish to go further with decorating. I am confused where it says to cover the pins. What do I cover them with? If I cover them, how do I use them later to pin the decorations. The pins have to be removed from the cake eventually, is that correct?

Ok so you pin the fondant drops to the cake till it sticks.. Then you remove the pins andcover up the pin holes with royal icing and the pearl for decoration. The pin should never enter the cake itself, just enough to hold the drops in place.

How do you get the area where the top and bottom tier connect so clean? Do you add royal icing to the crease to close off that gab? It almost looks like you covered both the cakes in fondant at once, one stacked on top of the other before covering in fondant... I always have to cover my edges in ribbon or fondant strips because my gaps are so visible. Do share!
Sally Ryan on craftsy.com

I try and leave the bottom tier as long as i can to set a little. then I cover the next tier and leave a little exess fondant around the bottom. Then stack the cakes. I use acetate sheets in the palm of my hand to rub around the bottom and a scalpel to cut the fondant off. Being very careful not to cut into the cake underneath. The acetate sheetsin your hand a warm and will almost rub anything clean given enough time and work. But can dig in to the fondant if careful. Hope this helps.

Absolutely beautiful...I love the string work with the fondant, like everyone else never even considered this method. And using royal icing to glue it on is another wonderful idea. Now I will give string work a try. I too am very fussy about my cakes, and after all that is your signature so to speak when looking at the finished cake. I will also try the Bakels fondant. As the saying goes " I get by with a little help from my friends" Thanks again :-) Happy Holidays !

I can see why this cake won. It is simple yet elegant and your work is perfect. I love the idea of using a clay extruder to obtain the "string work" look. I never would've thought of it. There's more than one way to skin a cat (whatever that means - ha. I've heard it all my life, tho.) Thank you for sharing that technique. This really is beautifully done.

Thank god there is another way to do string work. I get so nerveous when a client asks for it. I am honest and explain that my string work is far from perfect and not professional looking. If the client is dead set on it I just say that I could not sell her a cake with intricate string work. If, in my eyes and in my stlyle, the cakes are not perfect I will not sell them. I want every peice of mine to be my best. However, now I can do it!! Thank you so much!!

Shann, it is also referred to as a clay extruder. There are many different kinds and brands available. You can purchase them at most of your craft stores & they can also be purchased online. I've provided a link that will show you the one I use & it has lots of different discs. This is made for use with polymer clay and can be found in that department of your craft store but is also used in cake decorating. Don't mix the two, however. If you're going to use it for cake decorating then don't use it for anything else. You can purchase these on Amazon.com, too. http://www.wholelottawhimsy.com/wo/content/shopping/product?s=4945948&c=5284953&p=4772165

If you wet a little ball of fondant with boiled water and use ut to "glue the cake to the board. Stops the cake from sliding off.

When you use the clay gun for the piping, do you do it separate from the cake and then glue it on? If so, is there a risk of it breaking? Bit concerned about leaving pins in the cake though:-)
Sally Ryan on craftsy.com
Jun 03, 2012   Flag as inappropriate
The pins only sit in the fondant until the tylose glue sets. I pipe out the strands and let them sit for 5min just to let the outside air dry. Then position on the cake. This gives the strand strength, However if the strand is to long or to thick it may still break under its own weight. I have since used thick royal icing as glue and it sets faster and stronger.

Beautiful. I love this cake! Could you please clarify the height of the 7 and 9 " layers. Proportionately they look like 4 in" each which would be a total of 16" tall (plus flower, stand and board of course), or were they smaller.

Sally Ryan and Angellarts, I too wonder about the size. However do you get to 16"??? Each tier has 2 layers and I am assuming that they're cut in half so each tier has four layers of cake, 3 layers of filling + top coat. To get to 16" your filling layer is 1" thick. That seems really thick...
