I made a cake like this last summer here in Los Angles but I had a problem as some of the swirls fell off. I used a stiff buttercream and just a light crumb coat underneath and put in the refrigerator right away. Not sure what else to do.

I've had that problem if my cake is too cool (I flash freeze mine so they crumb coat better). The swirls actually stick better if the cake is really moist or even damp on the outside, if that makes sense. And it does help to thin out your buttercream a bit. I've used cream cheese frosting on the outside of one before and had to make it a bit stiffer than normal, so sometimes you have to just adjust your recipe a bit. :)
