What advice would you give someone starting this project?

I did not quite get the shaping right, and there was not as much over spring as expected, but these turned out pretty well.

Dear sirs, I applaud this new style of cooking school. I have many of Peter Reinhart's cookbooks and like his folksy style. He doesn't come off as a stiff professional, more like an everyday type of person that has an appreciation for fine pizzas, traditional bread, etc. I have just purchased the bread making course and an looking forward to hearing Peter in person. After reading "American Pie" I feel like I know him already. Thank you for choosing him as an instructor. I hope all the instructors for your classes are like Peter and not like "celebrity chefs". How about Ming Tsai? Tom Couts
