Share a little about the ingredients and techniques used to create this dish/item. Flourless Peanut Butter Chocolate Chip Cookies bring us the timeless combination of Peanut Butter and Chocolate! This recipe is gluten free for the simple reason that it contains no flour of any kind. Yes, you read that right? NO FLOUR. I did not have to adapt this cookie recipe because it was already gluten free. Flourless Peanut Butter Chocolate Chip Cookies are a lovely sort of delicate textured cookie, with plenty of peanut flavor, and gooey dark chocolate chips. The wonderful flavors practically burst in your mouth, like a peanut butter cup. It contains a bit of salt on the peanuts, and with the sugar in the cookie, and the chocolate chips, you get that awesome sweet/salty flavor that makes you go back for more! FLOURLESS PEANUT BUTTER CHOCOLATE CHIP COOKIES 1 Cup of Creamy or Crunchy Peanut Butter 3/4 Cup sugar 1 Large Egg, lightly beaten 1/2 teaspoon Baking Soda 1/4 teaspoon Salt 1/2 Cup Semi Sweet Chocolate Chips ? good quality 1/2 Cup Roasted Salted Peanuts Preheat the oven to 350. Stir together peanut butter and sugar. Add baking soda, salt and egg, and mix thoroughly. Dough will be crumbly. Stir in peanuts and chocolate chips. Measure dough into heaping Tablespoons, and roll dough into balls, pressing the dough around the chocolate chips and peanuts. Place cookie balls on a parchment lined or ungreased cookie sheet two inches apart, and bake for 15 to 17 minutes, or until cookies are golden and puffed. Leave cookies on the cookie sheet at least 10 minutes, or until cooled. Transfer to a cooling rack until chocolate chips are set. Store in an airtight container for up to 1 week.
