Instructions

This cake was commissioned for a friend's 50th birthday.
I made the chocolate flakes around the edge myself using tempered chocolate.
All of the roses are made by hand.

Materials

Chocolate mud cake sandwiched with dark chocolate ganache and decorated with cocoform roses in dark, milk and white chocolate.

What was your inspiration?

My friend was quite specific about what she wanted and had even researched on the internet, so between us we came up with the design.

What are you most proud of?

It was the first time I had worked with ganache, so I was very pleased with the outcome and that managed to get the top so smooth!

What advice would you give someone starting this project?

Working with chocolate requires cold hands and equipment, keep your cocoform in the fridge until you are ready to make your roses. White cocoform seems to melt quicker than dark, so work as quickly as you can. I had a bag of ice cubes in a bowl in order to cool my hands down as I worked.
