Yes, there's such a fine line between over-twisted and not enough twist! You definitely need enough twist to hold the yarn together. Have you tried plying and setting your yarn yet? Plying will definitely help with any over-twisting, and setting will help re-distribute any overspun and underspun parts throughout your skein. It really is all just a matter of practice!
My father in law made the spindle for me--he's pretty craft-y too. :-) I'm working on my second skein of yarn--it's much thinner and more even. Practice definitely leads to improvement! Question: I think I'm over twisting and my yarn is very ropy and not very soft although the wool is extremely fluffy and soft. I'm afraid to twist it any peas though because it breaks. Would a smaller, lighter spindle help? Do you have any other hints? (I haven't finished watching the course so I apologize if this is already covered!
