Understand the basics of sashiko, it is stitched to stabilize and strengthen, You are not just making stitches into a design, you are using the stitches. That's what makes it come out smooth and strong without bunching up. If it's your first time I'd recommend practicing on sashiko fabric to get your hand-stitching comfortable and consistent. Many shops do not carry this, you can get it on-line however.
