It does not matter that my mixer broke down a day before I bought this course, I have been making baguettes and batards like crazy for the last two weeks!!

Actually, my best friend's son lives in Sydney, AU and is here in Iowa, USA with his mother for 2 weeks. Perhaps I can crawl in his luggage to Sydney and then hop a flight to New Zealand. Sounds like a fun fantasy adventure!! Keep up the good work with the food. I LOOOOOOOVE fresh bread products, especially baguettes.

Yup, and cut at an angle like you are trying to make a pocket...I didn't use a blade or anything, just my sharpened vitronox knife.
