What are you most proud of? That my husband ate all the Peach jam. He had said he had never really liked Peach jam or jelly, but he must have really liked mine because there is none left.

What advice would you give someone starting this project? Don't do it with a broken wrist. It was difficult getting the hot liquid into the jars and then getting them capped.

I need hot pepper jelly recipe !!

I did two kinds of pepper jelly. the first one was a regular apple jelly using apple juice, slice hot peppers really, really thin (wear goves & mask if they are real hot peppers) and add them into the jelly before adding the sugar. process as usual. You can make any kind of hot pepper jelly this way.

Basically all jellies are simple the recipes are the same. Boil the fruit an hour, strain into a sterilized bowl, use muslin, jelly bag, pillow case etc. One pint of liquid to 1 LB sugar. You must use jam sugar which contains pectin that way there is no hit or miss in setting. Boil the strained liquid and sugar for 15 mins then test for setting, drop a small puddle about 2cms diameter onto a cold plate and see how long it takes to set, when about 30 secs its done otherwise you will have a pan full of toffee. Rose petal jelly is superb but I would add a boiled and strained apple to the mix to up the pectin level.
