Share a little about the ingredients and techniques used to create this dish/item. Napoletana Pizza base with: Base: Caramelised garlic, onion, tomato and spicy paprika oil Toppings: Homemade pancetta finely sliced, fresh sliced Roma tomato rounds, caramelised onions, mixed shredded cheese (Parmesan, cheddar and mozzeralla).
What are you most proud of? This pizza combines my homemade preserved larder favourites with fresh ingredients to make a stunning combination!
What advice would you give someone starting this project? This is my quintessential Gourmet Meditteranean Pizza but it does take commitment to make. The caramelised garlic and onion are two preserves I make and have on hand in the refrigerator. The homemade pancetta takes many weeks of spice salt curing and is an absolute joy. You can make these items yourself for preservative and added colour free food and keep a supply on hand to feed you and your family in a variety of delectable and interesting ways. Alternatively, buy good quality preserved garlic and onion under oil as well as pancetta/prosciutto or bacon from the delicatessen.
