What are you most proud of? Just trying to make them at home because they are a bit labor intensive, though a lot of that time you are just waiting for the dough to chill in the fridge in different stages of the process. And I'm proud of the rise in my dough and that they taste great!

What advice would you give someone starting this project? Read through the entire recipe and info list first. Then watch the Supplies video segment so you can see the importance of using specific ingredients and tools (like a good rolling pin). Then buying the ingredients/supplies and watching the videos all the way through at least once. And take notes on your recipe sheet because the instructor has good tips that are not included on the recipe list that might help you be more successful when baking. These notes will also help you when you make the croissants again later.

Colette, these the croissants made with unsalted Kerry Gold. I'm the student who couldn't find unsalted Plugra (well, I finally found it at one store, but it was sold out!). My husband couldn't wait for me to garnish them, so we just ate them as is. And the first thing he said was "Mmmmm"! Thank you for a terrific class! You are a really good and thorough teacher!

Hi littlecp, What beautiful pain au chocolat! And the Kerry Gold worrked out - it is such delicious butter. I am so happy that you enjoyed the class. You did a great job. The bake, the shaping and the layers - great job! Happy Baking! Colette

Wow... look at those Pain au Chocolat - they look professionally made!!! Makes me homesick (born in France)... Looks like I missed out on a good class offered by Colette. I'm going to have to look into this class if I can end up with yummy Pain au Chocolat like this!! Nice job - wish I was there to nibble on one in person - LOL
