One word description: delicious. The recipe used butternut squash that was roasted in the oven, and then simmered in stock with onion and potatoes and seasonings. The soup was then blended. Anna's recipe included serving it with Goat Cheese Toasts. Since I am gluten free, I made a loaf of herb bread. I didn't have bay leaf for the soup so I used rosemary instead. All the herbs used in both the bread and soup were raised in my Aero Garden. Even my grandson liked the soup. He is autistic and things with different textures turn him off.
