Pork Tamales with Red Enchlidia sauce

Share a little about the ingredients and techniques used to create this dish/item. I cooked a Pork butt in the crockpot with some chilies and seasoning. I made the red sauce for the Tamales, and made the masa for the tamales and then put this all together in a corn husk. The Tamales where steamed for one hour and a half and they where ready for a taste test. The Tamales where perfect, they where so good I sent some the neighbor for their taste test.

I would love to make tamales, so long as there is no lard involved. Are the tamales made with lard for this class? Thank you.

lard is the true way to make tamales, you could sub with coconut oil, I do not like Crisco as it is hydrogenated. lard is not hydrogenated or is coconut oil. you will not get the true flavor hot using lard but will get a great tamale anyway. I had Mexican friends taste these and they wanted more, said tastes like there grandmothers.
