Herb rub: 1/2 t each thyme, sage, marjoram, & basil; 1 t oregano & 1/8 t pepper mixed into 1 T olive oil. Rubbed all over roast. Cooked uncovered. Combination method: 450 degrees 15 min; 250 degrees until meat temp is 140 degrees. #2 - brined with garlic, pepper & bay leaf, on a bed of thin sliced cabbage, onion, & apple, sprinkled with rosemary @ fennel seed; roast sprinkled with black pepper @ rosemary; roasted slow @ steady @ 325 degrees. degrees
