Share a little about the ingredients and techniques used to create this dish/item. This is my first time at making pasta by hand. I tried once with my mixer and I didn't like how it turned out. I used the white flour recipe and was so engouraged with the result today that I made 3 batches of 3 eggs each. The dough rolled very nicely and the course thought me how to make the different shape. I made parsley ricotta stuffing but added finely crushed cooked bacon to it. I used the stuffing for the ravioli and the tortellini. I also cooked the tomato onion sauce and used it with the ravioli. It was very delicious.
