Share a little about the ingredients and techniques used to create this dish/item. I used egg yolks, avocado oil, extra virgin olive oil, coarse salt, garlic, fresh ground pepper, and lemon juice. The entire sauce was complete in a mortar and pestle. Started with coarse salt and garlic to make a nice paste, then added two egg yolks and mixed together until creamy. To start the emulsion I used avocado oil as my neutral oil to get the emulsion started and then switched to extra virgin olive oil. Once I reached a nice consistency I finished with a teaspoon of fresh squeezed lemon juice and fresh ground pepper to taste.
