Country dough with poolish

Project Description

Share a little about the ingredients and techniques used to create this dish/item. This is Peter's country pizza dough BUT I subbed poolish for 1/2 the bread flour (and reduced the additional water as well). The result was INCREDIBLE - got a crazy oven spring in the crust - delicious! Can't wait to do the other half of the dough tomorrow!
