Thank you! Don't be intimidated, however it really does need some practice in making the fans but I have found that semi-sweet chocolate is the best. Don't give up because eventually it will come out perfectly. In my opinion, the more cocoa % makes the chocolate harder to handle so that is why I prefer semi-sweet chocolate.
