The cakes were baked 1 week ahead to accommodate the adding of fruit wine to the cake which made the cake more moist and less crumby. A butter cream made of butter and shortening (Jamaica is very humid) was applied before the fondant. I also made the fondant 3 days in advance to allow it to rest. A quilting pattern was used in the middle tier to add more detail to the cake. Sugar flowers were made 2 weeks in advance. The bride requested a variety of color roses to go along with the colorful theme of her day! The cakes were assembled at the wedding destination. The flowers were applied using royal icing to hold in place.
