Wedding Cake

Project Description

Share a little about the materials, processes, and techniques used to create this cake Nicholas Lodge's gorgeous flower paste recipe, toothpicks and pearls for the roses. The cake is red velvet with vanilla bean cream cheese (bottom tier), chocolate with salted caramel buttercream (middle tier) and lemon with lemon cream cheese (top tier) What are you most proud of? I'm glad I tried Nicholas' technique of making one of each of the six stages of the rose; from tight bud to full bloom. I've made roses before, for Communion cakes, etc but this technique worked so beautifully for this cake. If I have one regret, it's that I made my leaves rather flat, instead of having them curl realistically against the cake. Next time... :) What advice would you give someone starting this project? Dont hesitate to try it! You'll surprise yourself! My roses aren't nearly as good as they can be with practice but I now have an excellent flower paste recipe and techique to work with. I'm lookig forward to buying as many classes as the peerless Nicholas Lodge will record! Happy rose making! :)
