The Sugar Garden

My favorite project so far. I was asked to make a floral cake but they wanted some gold in it so I did a gold drip using royal icing over a ganache of white chocolate before putting on my hand-piped buttercream flowers. I tried to make the flowers as realistic as possible to resemble a fully-bloomed garden.

Irene, Do you teach how to make all the flowers on the sugar garden cake in this class? Also do you give the exact recipe for the frosting you are using to pipe flowers in the video? I can see it isn't a typical buttercream. Is the gold ganache taught in this class also? The cake with all the cupcakes surrounding it looks absolutely beautiful! Thank you, ~ Gayle

Hello! Sorry, I don't teach! I'm just a student who absolutely loves making floral buttercream cakes. But yes, I have my own buttercream recipe which is super stiff and can hold up for hours on end even in humid weather. Thank you so much! :)

This may be a dumb question, but here goes! Did you make the flowers separately and add them in a type of random arrangement, or did you make the flowers right on the cake itself? You did such and awesome job with this! You can always tell that I truly love something when I go "Ooooohh!" and don't follow it up with an additional comment right away! Another question- do you think different color schemes could work as well? How did you choose your colors?

Hello! No dumb questions here! :) Yes, I did make the flowers separately. That way I can make sure that the colors and flowers on the cupcakes and the cake are distributed evenly. Any color scheme would work! I always ask the recipient of my cakes for any color preference, then work around that color. Thank you so much for your kind words! :)
