Most surprising for me is the simplicity of making Swiss Meringue Buttercream by following Joshua John Russell in his Modern Buttercream class!! This is way less complicated than I thought! What advice would you give someone starting this project? Try the recipe from Modern Buttercream! Only I cut back my second time to only 4 sticks of butter. Then I added 1 1/2 cups powdered sugar and a little meringue powder to give it more body. I ran out of buttercream and time, so I put fresh strawberries on top. It is a beautiful buttercream!
